Espresso coffee needs to be served in a totally white ceramic. It should be cone-shaped with the cup able to hold a maximum of 60 cubic centimeters (cm3).Before serving, the cups must be kept dry and warm … that’s why you’ll often see coffee cups stacked, open-side up, in their space on top of commercial espresso coffee machines. | |||||||||||||||||||||||||||||

Open the cup-heater knob completely – making it rotate counter-clockwise. Keep it open for as long as it takes to heat all the cups placed on the special grid. For safety reasons, it’s not recommended to put cloths or anything else that stops the normal circulation of the air on the top cover plate of the machine. | |||||||||||||||||||||||||||||

Tamping the coffee grounds in the filter holder cup is important. If it’s not hard enough, you’ll get a weak extraction with no crema. If it’s too hard, you’ll get over extraction or a very slow pour… it may not even pour at all.
